Smoked Salmon & Avocado Toast

Ingredients:

• 2 slices sourdough bread

• 1 ripe avocado

• Juice of ½ lemon

• 100g smoked salmon

• 2 poached eggs (optional)

• Salt & black pepper

• Chilli flakes (optional)

Method:

1. Toast the sourdough bread until golden.

2. Mash the avocado with lemon juice, salt & pepper.

3. Spread the avocado on the toast, layer with smoked salmon, and top with a poached egg (if using).

4. Sprinkle with chilli flakes for an extra kick.

Smoked Salmon Pancakes

🕒 Prep Time: 20 mins | 🍽 Serves: 4

Ingredients:

• 150g plain flour

• 2 eggs

• 250ml milk

• 1 tbsp melted butter

• 150g smoked salmon

• 100g crème fraîche

• Chopped chives

• Lemon wedges

Method:

1. Whisk flour, eggs, and milk together until smooth. Stir in melted butter.

2. Cook thin pancakes in a pan over medium heat.

3. Fill each pancake with smoked salmon, crème fraîche, and chives. Fold and serve with lemon wedges.

Smoked Salmon & Cream Cheese Wrap

Ingredients:

• 2 tortilla wraps

• 100g smoked salmon

• 100g cream cheese

• ½ cucumber, sliced into ribbons

• Handful of rocket

• Black pepper

Method:

1. Spread cream cheese over the tortilla.

2. Add smoked salmon, cucumber, and rocket.

3. Season with black pepper, roll tightly, and slice in half.

Smoked Salmon Miso Soup

🕒 Prep Time: 10 mins | 🍽 Serves: 2

Ingredients:

• 500ml water

• 1 tbsp miso paste

• 1 tbsp soy sauce

• 50g tofu, cubed

• 50g smoked salmon, sliced

• 1 spring onion, chopped

• 1 tsp sesame seeds

Method:

1. Heat water and whisk in miso paste & soy sauce.

2. Add tofu and simmer for 5 minutes.

3. Stir in smoked salmon and spring onion. Serve with sesame seeds.

Smoked Salmon & Asparagus Pasta

🕒 Prep Time: 15 mins | 🍽 Serves: 2

Ingredients:

• 200g pasta (tagliatelle or linguine)

• 150g smoked salmon, torn into strips

• 100ml double cream

• 1 garlic clove, minced

• Zest & juice of 1 lemon

• 6 asparagus spears, chopped

• Parmesan & black pepper

Method:

1. Cook pasta, adding asparagus for the last 3 mins.

2. Heat cream, garlic, and lemon zest in a pan.

3. Drain pasta and toss in the sauce with smoked salmon.

4. Serve with black pepper & Parmesan.

Smoked Salmon Kedgeree

🕒 Prep Time: 30 mins | 🍽 Serves: 4

Ingredients:

• 250g basmati rice

• 1 onion, chopped

• 1 tsp curry powder

• 400ml stock

• 2 boiled eggs, halved

• 150g smoked salmon, torn

• Handful of parsley, chopped

Method:

1. Sauté onion and curry powder until soft.

2. Add rice and stock, cook until fluffy.

3. Stir in smoked salmon and parsley.

4. Top with boiled eggs and serve.

Smoked Salmon & Pesto Pizza

🕒 Prep Time: 15 mins | 🍽 Serves: 2

Ingredients:

• 1 pizza base

• 3 tbsp crème fraîche

• 100g smoked salmon

• 2 tbsp pesto

• Handful of rocket

Method:

1. Spread crème fraîche over the pizza base and bake for 10 mins.

2. Top with smoked salmon and rocket.

3. Drizzle with pesto before serving.

Ingredients:

• 1 baguette, sliced

• 100g goat’s cheese

• 100g smoked salmon

• 1 tsp honey

• Fresh dill

Method:

1. Toast baguette slices.

2. Spread with goat’s cheese, add smoked salmon, and drizzle with honey.

3. Garnish with fresh dill.

Cucumber & Smoked Salmon Bites

🕒 Prep Time: 10 mins | 🍽 Serves: 4

Ingredients:

• 1 cucumber, sliced into rounds

• 100g smoked salmon

• 100g cream cheese

• 1 tsp lemon juice

Method:

1. Mix cream cheese with lemon juice.

2. Spoon onto cucumber slices and top with smoked salmon.
