Ingredients:
• 2 slices sourdough bread
• 1 ripe avocado
• Juice of ½ lemon
• 100g smoked salmon
• 2 poached eggs (optional)
• Salt & black pepper
• Chilli flakes (optional)
Method:
1. Toast the sourdough bread until golden.
2. Mash the avocado with lemon juice, salt & pepper.
3. Spread the avocado on the toast, layer with smoked salmon, and top with a poached egg (if using).
4. Sprinkle with chilli flakes for an extra kick.

Ingredients:
• 150g plain flour
• 2 eggs
• 250ml milk
• 1 tbsp melted butter
• 150g smoked salmon
• 100g crème fraîche
• Chopped chives
• Lemon wedges
Method:
1. Whisk flour, eggs, and milk together until smooth. Stir in melted butter.
2. Cook thin pancakes in a pan over medium heat.
3. Fill each pancake with smoked salmon, crème fraîche, and chives. Fold and serve with lemon wedges.

Ingredients:
• 2 tortilla wraps
• 100g smoked salmon
• 100g cream cheese
• ½ cucumber, sliced into ribbons
• Handful of rocket
• Black pepper
Method:
1. Spread cream cheese over the tortilla.
2. Add smoked salmon, cucumber, and rocket.
3. Season with black pepper, roll tightly, and slice in half.

Ingredients:
• 500ml water
• 1 tbsp miso paste
• 1 tbsp soy sauce
• 50g tofu, cubed
• 50g smoked salmon, sliced
• 1 spring onion, chopped
• 1 tsp sesame seeds
Method:
1. Heat water and whisk in miso paste & soy sauce.
2. Add tofu and simmer for 5 minutes.
3. Stir in smoked salmon and spring onion. Serve with sesame seeds.

Ingredients:
• 200g pasta (tagliatelle or linguine)
• 150g smoked salmon, torn into strips
• 100ml double cream
• 1 garlic clove, minced
• Zest & juice of 1 lemon
• 6 asparagus spears, chopped
• Parmesan & black pepper
Method:
1. Cook pasta, adding asparagus for the last 3 mins.
2. Heat cream, garlic, and lemon zest in a pan.
3. Drain pasta and toss in the sauce with smoked salmon.
4. Serve with black pepper & Parmesan.

Ingredients:
• 250g basmati rice
• 1 onion, chopped
• 1 tsp curry powder
• 400ml stock
• 2 boiled eggs, halved

• Handful of parsley, chopped
Method:

2. Add rice and stock, cook until fluffy.

Method:
1. Toast baguette slices.
2. Spread with goat’s cheese, add smoked salmon, and drizzle with honey.
3. Garnish with fresh dill.
